Frito Pie

Frito pie for dinner:
1 lb ground beef browned with onions and drained
I can skyline chili, mix with beef and heat till warm
Spread in bottom of 8x8 or 9x9
Top with fritos
Top with cubed velveeta
Bake at 350 for 20 min or until cheese is melted

Loaded Baked Potato Chips

Bridgett Queenb Patterson Cut 3 medium potatoes into chips. Place on cookie sheet and brush top and bottom with melted butter. Bake at 375 for 40 mins then sprinkle package of Potato Topping on top and add shredded cheese. Bake for 5 more minutes or until cheese has melted then Enjoy! ......I ate mines with Buttermilk Ranch dressing

Sloppy Joe Casserole

Sloppy Joe Casserole
1lb ground beef
1 small onion, diced
1 can sloppy Joe sauce
1 cup (or more :) Shredded cheese - I used fiesta blend

2 bags tater tots
Brown ground beef with diced onion. Add can of sauce and simmer until heated through.
Pour beef mixture into 9x13 pan. Top beef mixture with shredded cheese. Layer taters tots on top. Bake at 350 degrees for 1 hour. Sooo yummy!!

Turkey Chili

Turkey Chili!
1 1/4 lb ground turkey (one Jenny-o package)
1 small onion diced
1 heaping tbl spoon minced garlic
1 small green bell pepper diced
...
2 tsp chili pwdr
1 1/2 tsp cumin pepper
1 jar chunky salsa
2 14oz cans diced tomatoes
2 cans beans (your choice)
1 can Rotel tomatoes with free chilies
Salt & Pepper to taste
If you like more heat add crushed red pepper flakes to suit your taste.
Brown turkey with garlic, onion and green pepper. Add to the crock pot with remaining ingredients and cook on low for 6-8 hrs. I sometimes add 1 cup frozen corn and 1 cup diced fresh carrots. My family loves this and it's very easy and healthy! Make sure to buy only canned tomatoes with only natural tomatoes, nothing added as with any other ingredient to have the best quality and nutritional benefits. You can easily skip the jar if salsa to avoid more processed foods (I usually do). I also garnish with sharp cheddar right before serving. Enjoy!

Snicker Doodle Poppers

I made these Sunday night and they are amazing! I brought some to my neighbors and to the office today and they are a huge hit. Not to mention these were so easy to make. My mom found this recipe on Heather Pettit's page. It is a must try.

1 can of Pillsbury Grands Flaky Layers Biscuits
...
1 Box of instant Cheese cake JELL-O
1 1/2 Cups of Cinnamon Sugar
Oil for frying
A flavor injector (usually found by the marinades and bbq sauces)

Directions:
Unroll the biscuits and cut them into fourths. Roll each piece into a ball…

Prepare the instant Vanilla pudding according to the directions and set aside..or feel free to make your own Pastry Cream!

In a medium pot heat up about 2″ of Canola Oil. Place about 4 balls at a time into the hot (350 degrees) oil and fry until both sides are evenly golden.

Straight from the oil into the Cinnamon, coat the hot Poppers in the Cinnamon Sugar…and coat them good!

Carefully inject each popper with some of the Cheesecake Pudding.
Pile up a gorgeous Snicker doodle mountain of them. Eat your way to the top one Popper at a time

Italian Bread Pudding Source: Welcome Home recipe/.picture

Italian Bread Pudding

2 large eggs
1 can (14-1/2 oz.) Italian seasoned diced tomatoes, undrained
2 tsp. bottled minced roasted garlic

1-1/2 tsp. dried basil or oregano or 3/4 tsp. each
1/4 tsp. crushed red pepper flakes or freshly ground black pepper
4 cups cubed Italian bread (about 4 oz.)
1-3/4 cups Sargento® Traditional Cut Shredded Mozzarella Cheese , divided
2 Tbsp. chopped fresh basil or Italian parsley (optional)

In a large bowl, beat eggs until frothy. Add tomatoes, roasted garlic, dried basil and pepper flakes; mix well. Add bread cubes and 1 cup cheese; mix well.

Coat a shallow 1-1/2-quart baking dish or 8-inch baking dish with cooking spray. Spoon bread mixture into dish; top with remaining 3/4 cup cheese. Bake in a preheated 375 degrees oven 25 minutes or until set in center and cheese is golden brown. Let stand 5 minutes before serving. Italian Chichen frim one of my Facebook Members:Sheila Perry Muncie

 
1/2 cup of olive oil
1/2 cup of lemon juice
1/3 cup of rice wine vinegar
1 tsp of red pepper flakes
2 tsp of oregano
...
4 cloves of garlic minced
5 tsp of dried minced onions
Mix all ingredients together and set to the side.

10 chicken legs
3 lbs. of red potatoes
1 bag of carrots
2 lg zip loc baggies

Remove skin from the legs
And place in bag.
Cut potatoes and carrots put in the other bag.

And put the marinade in the bags and shake..let it sit in the fridge overnight...take out and put it in pan and bake for a hour there's so much I have to use two pans but mix the the legs with the potatoes because it gives flavor

I boil the carrots for about 5 minutes before putting in bag because they take longer to cook

Directions

Preheat oven to 350° F . Line a sheet pan with aluminum foil and coat with canola or vegetable spray. NOTE: I use a 13x9 inch pan becasue I prefer them thicker. You can adjust the size of the pan to your preference. You can use 1/2 the recipe if you do not need as much.

In a small bowl, cream butter and brown sugar until combined. Add the flour and salt. Carefully mix to combine until it resembles chunky bread crumbs. Transfer into the prepared pan and evenly press the batter into an even layer. Bake for 8 minutes. Cool on a wire baking rack while preparing the coconut topping.

In a large bowl, combine the condensed milk, coconut, and vanilla. Spread over the crust and bake for another 20-25 minutes, until it begins to brown.

Melt the chocolate over a double boiler. Stir until melted and smooth. Pour over cooked coconut bars and spread into an even layer. Allow to cool then refrigerate until hardened, about 1 hour. Cut into 36 squares.

In a large bowl, mix the pudding with the milk. Whisk in the Cool Whip. Unwrap the Reese’s Peanut Butter Cups (about 15 of the large ones, or about 25 of the minis, or however many you want to put in) and chop them roughly. Fold the chopped candy into the pudding mix. Pour all into the chocolate pie crust. Top with a few more chopped peanut butter cups. Store in the freezer till about 15 minutes before serving.

This ranch is AMAZING and has quickly became our new favorite. You can use LITE buttermilk, sour cream and mayo and it is STILL really good. It doesn't taste at all like the lite version in the stores. So much yummy ranch flavor!

1/4 cup Black Pepper

1 1/2 cups Parsley Flakes
1/2 cup Garlic Salt
2 Tbsps Kosher Salt
1/4 cup Granulated Garlic
3/4 cup Granulated Onion
2 Tbsps Dill Weed

Combine all ingredients, store in an airtight container. Makes about 3 ½ cups of dry mix. Will only use 2 Tbsps of this mix for each batch.

To Make Dressing, whisk together:
2 Tbsps of mix
2 cups mayonnaise
2 cups buttermilk
1 1/2 Cups sour cream
1 tsp Lemon Juice

Refrigerate for 2 hours.

The chicken coating:

3-4 boneless chicken breasts

salt + pepper

1 cup cornstarch

2 eggs, beaten

1/4 cup canola oil


The sweet and sour sauce:


3/4 cup sugar

4 tbs ketchup

1/2 cup distilled white vinegar

1 tbs soy sauce

1 tsp garlic salt


Start by preheating your oven to 325 degrees. Rinse your chicken breasts in water and then cut into cubes. Season with salt and pepper to taste. Dip chicken into the cornstarch to coat then dip into the eggs. Heat your 1/4 cup oil in a large skillet and cook your chicken until browned but not cooked through. Place the chicken in a 9x13 greased baking dish. Mix all of your sweet and sour sauce ingredients in a bowl with a whisk and then pour evenly over the chicken. Bake for one hour and during the baking process you will need to turn the chicken every 15 minutes

Moist Coconut cake by Nana's Recipe Box

Very Moist Coconut Sheet Cake

1 Duncan Hines White Cake mix
3 eggs
1 cup milk
...
1/2 cup vegetable oil
1 small box vanilla (or almond) pudding (I used vanilla)
1 teaspoon vanilla (or almond) extract (I used vanilla)

Mix together all ingredients until smooth and creamy. Pour into a 9 x 13 pan that has been greased and floured. (I used Baker's Joy.) Bake at 350 for 32 - 35 minutes or until tooth pick comes our clean.

1 can of cream of coconut
1 can of sweetened condensed milk

Mix these two ingredients together. Poke holes in the hot cake and slowly pour this mixture over the cake. Let cake cool and then frost with the following:

8 oz. container of Extra Creamy Cool Whip
12 oz. frozen grated coconut (Sprinkle this over the top of the Cool Whip)

Ingredients

4 tablespoons butter, plus more for greasing pan

4 cloves garlic, minced

1/4 cup flour

2 cups milk

1 teaspoon dijon mustard

1/2 teaspoon sea salt and a few cracks fresh black pepper

2 + 1/2 cups cheddar cheese, shredded

1/3 cup fresh Parmesan cheese, shredded

3 cups cooked rice ( I used brown)

2 -3 cups cooked broccoli florets


Instructions
1.Grease a 9x13-inch casserole pan. Preheat oven to 400 degrees F.
2.In a large saucepan melt the butter over low heat; add garlic and saute until fragrant. Whisk in flour and cook 3-4 minutes, whisking constantly. Slowly whisk in milk, mustard and season with salt and pepper, bring to a simmer 4 minutes, whisking occasionally. Add 2 cups of cheddar cheese and parmesan; stir until mostly melted; remove from heat.

2 ounces Tortilla Chips (about 24), plus additional for serving

1 Tbs Chili Oil (or olive oil and red pepper flakes)

2 cloves Garlic, minced

1 pound Ground Chicken
2 Tbs Taco Seasoning
1 can Black Beans, drained
1 cup Hot Salsa
1 cup shredded Reduced Fat Cheddar Cheese
Optional: Other toppings such as jalepenios, olives, etc.

Directions

Preparation
Heat oven to 350.
Heat oil in a large skillet. Add the onion and garlic and sautee until soft. Add meat and taco seasoning. Cook, breaking up meat with a spatula, for about 5 minutes. Add beans and salsa. Mix well and continue to cook until salsa thickens.
Line the bottom of a large baking dish with tortilla chips, pressing down on them lightly to break them into bite-sized pieces. Spread the meat and bean mixture over the chips and top with cheese. Add sliced jalepenos or other toppings that you ant to be cooked. Bake for 20 minutes or until cheese is melted and gooey.
Scoop up with additional chips if desired.

Enchiladas

16 corn tortilla shells
1 1/2 lb ground beef (93/7)
Pack of enchilada seasoning
...
3 cans enchilada sauce
shredded cheese

Brown ground beef with seasoning pack added. Drain and set to side while heating tortilla shells over medium heat in skillet with small amount of oil (use tongs to flip, will need to add oil as you go). Fill shells with meat and roll up placing seam side down in 9 x 13 pan. Pour sauce over and place in preheated 350 degree oven for 15 minutes or until starts to bubble around the edges. Add cheese and continue heating until melted. Better if allowed to sit overnight in sauce and cooked the following day.

Melt a stick of butter in the pan. Slice one lemon and layer it on top of the butter. Put down fresh shrimp, then sprinkle one pack of dried Italian or creole seasoning. Put in the oven and bake at 350 for 15 min. Best Shrimp you will EVER taste:)


Garlic Pull Apart Bread from Dawn Smith a Member of my Facebook Group

You need: 1 can of Grands biscuits, 1/2 stick of butter, 1/2 cup of Parmesan cheese, 3 cloves of garlic ( I used the already chopped garlic in the jar).

Preheat oven to 350 degrees. Place the 1/2 stick of butter in bundt pan and put in oven. While that is warming up cut the biscuits into quarters. In a bowl toss the biscuits,garlic and Parmesan cheese.

Once butter is melted add the biscuit mixture. Sprinkle any remaining cheese/garlic mixture that is in bowl on top of the biscuits.

Bake 350 degrees 20-22 minutes until golden brown. Enjoy!

FOR THE CAKE:

2 cups Brown Sugar
2 cups All-purpose Flour
6 Tablespoons Unsweetened Cocoa Powder
...
4 teaspoons Baking Powder
1 teaspoon Salt
1 cup Milk
4 Tablespoons Butter, melted
1 teaspoon Vanilla Extract

FOR THE FUDGE TOPPING:

1 1/2 cups Brown Sugar
1/2 cup Unsweetened Cocoa Powder
3 cups Boiling Water


Directions: For the cake: Mix together the sugar, flour, cocoa, baking powder and salt in a large bowl. Stir in milk, melted butter and vanilla until combined. Spread the batter over the bottom of a large crock pot.

For the fudge topping: Mix together the brown sugar and cocoa. Sprinkle mixture over the cake batter.
Pour the boiling water over the top. DO NOT STIR! Cover and cook on High for 2 - 2 1/2 hours.

Cake will be very hot! Turn off heat, and remove lid. Let sit 20-30 minutes before serving, so its still warm but won't burn your mouth.

Cheesy Taters: Wash potatoes, cut into rounds put them in a 9x13 baking dish, sliced onions on top of the potatoes, then cover with shredded chesee, then using 1 stick of butter cut into little pats and cover the top of the cheese then add enough milk to almost cover but DO NOT cover completly & bake for about 30-40 minutes at 375.

Mountain Dew Cake

MOUNTAIN DEW CAKE:

1 Duncan Hines lemon supreme cake mix
1 box instant lemon cream pudding
1 (10 oz.) Mountain Dew

3/4 c. oil

ICING:

1 c. sugar
1/4 can of mountain dew
3 tbsp. cornstarch

Cake: Mix cake mix, pudding and oil. Add eggs, one at a time, beating after each. Add one chilled Mountain Dew. Bake in 3 greased and floured 9" pans for 30 minutes at 325°F. Ice while hot.
Icing: Mix and cook, stirring until thick. Remove from heat and add 1/2 stick butter and 1 small can Angel Flake coconut. Ice while hot

Zucchini Relish

Ground the following:

4 C onions
5 T salt

Mix and let sit overnight in the refrigerator. Rise in cold water and drain well in colander.

5 C sugar
2 1/2 C vinegar
3/4 tsp turmeric
1 1/2 tsp celery seed
3/4 tsp nutmeg
1/2 tsp black pepper
3/4 T corn starch
1 red and 1 green pepper chopped

Bring to a boil & cook until it starts to thicken, then add zucchini and onion mixture and cook for 30 minutes.

5 oz. dried spaghetti, broken

11 oz. can whole kernel corn with peppers, drained

1 cup colby jack or cheddar, shredded
1/2 cup salsa
4 oz. can diced green chili peppers, drained
shredded lettuce
tortilla chips
tomato
sour cream, optional

Directions:

1. Cook pasta according to package directions. Drain. Preheat oven to 350F.

2. In a 12-inch skillet, cook beef and onion until meat is brown. Drain fat. Stir in water and taco seasoning. Bring to a boil; reduce heat. Simmer uncovered for 2 minutes, stirring occasionally. Stir in cooked pasta, corn, olives, half of the cheese, salsa, and green chili peppers.

3. Transfer mixture to lightly greased 2-quart round casserole. Cover with aluminum foil and bake for 15 to 20 minutes until heated through. Sprinkle with remaining cheese and bake until melted.

4. Serve with shredded lettuce, tortilla chips, tomatoes, and sour cream, if desired.

Melt 2 sticks of butter in a 9x13 dish

Mix together in a bowl;

1 1/2 cup sugar
1 1/2 cup self rising flour
1 tsp. vanilla
3/4 cup of milk plus a smidgen

Pour this over the melted butter; DO NOT STIR, just drizzle the above over the butter.

In another bowl mix;

1 cup sugar
1/3 cup cocoa

Sprinkle this over the above mixture. Again, DO NOT MIX into the ingredients already in the dish, just sprinkle.

Now add 2 cups of boiling water over the top of all of the above, DO NOT MIX, just pour over.

Bake at 350 uncovered for 35-45 minutes

OMGoodness look what I found!!!!!!!!!!!!!!!!

A delicious baked ravioli recipe. If you want you can replace the ravioli with another type of noodle for a still delicious result.


... Preparation Instructions

1. Preheat your oven to 425 degrees F.
2. Heat olive oil in a large sauce pan over medium heat.
3. Add minced garlic and saute with salt and pepper for about 1 minute.
4. Add thyme, oregano and tomatoes.
5. Bring sauce to a boil and reduce heat to a simmer.
6. Break up tomato chunks with a spoon as much as possible.
7. Scoop most of the bigger tomato chunks out and blend (I used a magic bullet, but a regular blender would work too) till chunks are gone. (There will still be some chunks, but small ones, you don’t want any full sized tomatoes in your sauce).
8. Return blended mixture to the sauce.
9. Simmer for about 15 minutes.
10. Meanwhile, cook ravioli in a large pot of boiling water, until they float to the top (pasta does not need to be completely cooked because it will continue to cook in the oven). You can use the package instructions for al dente.
11. When it’s done, drain water from pasta.
12. Toss pasta and sauce in a large bowl.
13. Pour pasta into a 9×13 pan.
14. Top pasta with Parmesan cheese, then mozzarella cheese.
15. Bake for 20 minutes, until pasta is golden.

Roasted broccoli with garlic

Cheap, easy, and delicious side dish.

Ingredients:

One bunch broccoli or large bag of florets- fresh
6 cloves of garlic finely chopped
Olive oil
Salt and pepper to taste

Preheat oven to 350
In 9x13 glass baking dish add olive oil to coat bottom of pan.
Add broccoli and coat with the olive oil.
Add salt and pepper to taste.
Add chopped garlic and coat again with a little extra virgin olive oil.
Cook for 20 min
Pull from oven and mix again.
Return to oven for 5 minutes.

My Grandmother's Lime Jello Salad

2 pks lime jello cook as directed strir in 1 pk cream cheese 1 can drained pineapple chunks 1 cup chopped pecans and let chill 4 hrs and serve

Strawberry Dump Cake


1 Angel Food Cake
2 Boxes Frozen Strawberries in Heavy Syrup
1 large container Cool Whip

Tear cake into pieces in a large bowl, add strawberries w/syrup and cool whip......mix and chill!!!!! Fast and Easy and taste GREAT!!!!

1 pkg Stove Top, prepared as directed on box 3 large chicken breasts,  cut up into cubes 1 can Cream of Chicken Soup 1/2 cup milk 1&1/2 cups shredded mozzarella cheese Stir milk and soup together until smooth, and then add 1 cup of the cheese. Stir in chicken pieces, and pour into a 9x13 pan. Spread remaining cheese on top, then cover with prepared stuffing. Bake about 40 minutes at 350 degrees or until chicken is completely cooked

Chicken/black bean/corn/Feta Tacos for lunch. Instead of rotisserie chicken I grilled 2 pieces of marinated chicken on my George Foreman...... replaced the Feta with Cotija cheese & called this lunch!

Quick Chicken, Black Bean, Corn & Feta Tacos

Shredded chicken, about 2 cups
...
1 can black beans, drained and rinsed
1 can corn, drained
salt, pepper and cumin to taste
1/2 cup (or more) crumbled feta cheese
1/2 avocado, sliced or cubed
diced tomatoes
pickled jalapenos
2 limes, cut into wedges
fresh cilantro, chopped
6-8 tortillas, flour or corn, warmed

Combine black beans and corn in a small saucepan with 1-2 tablespoons of water. Warm over low heat and season with salt, pepper and cumin if desired, stirring occasionally until warmed through, about 5 minutes.
Warm tortillas and keep warm while prepping the rest of your ingredients.
Assemble tacos: In the center of the tortilla layer chicken, then bean and corn mixture, cheese then the vegetables of your choice. Squeeze a lime wedge over the taco if desired.

Brownie/Candy Bar Delight




I was watching Paula Deen and she lined a pan with foil, then put a thin layer of a box brownie mix ( mixed according to directions) then she layed 3 large chocolate candy bars on top of the layer then she finished of by pouring the remainder of the brownie mix on top and baked according to directions and good golly miss molly it looked AWESOME

1,2,3 Cake

1  box of Angel Food Cake mix (just the contents of the box, no need to follow the directions on the box), and combine it with a 20 ounce can of crushed pineapple in its own juice. (No need to use a mixer, just stir it by hand) When you do this, something magical happens. The mixture starts to froth and it turns into an amazingly airy, fluffy bowl of deliciousness right before your eyes. Once it's all mixed up, simply pour it into a 9 x 13 pan and bake it at 350 for 30min.

uhmm Brown Gravy

                                            After frying up some tenderloin for breakfast I remove
                                            meat from oil, add about 3 tbls of flour to oil and take a
                                            fork and rake through the flour mixing it with the hot oil
                                            making sure to get the lumps out. I then add salt/pepper
                                            to taste, then I start adding milk slowly ( leaving stove set on med high)
                                            I stir until it gets to desired thickness!!!!!!

Addicting Chicken


Directions:

    1. First, preheat the oven to 350°F.

    2. Then combine the grated cheese and the seasonings. Line a shallow baking pan with foil. (Do not omit this step, or you'll still be scrubbing the pan for days!).

    3. Melt the butter in a shallow bowl or pan.

    4. Dip each piece of chicken into the butter, and then into the seasoned cheese, coating well.

    5. Arrange in the foil lined pan. Bake for 30-45 minutes at 350°F.

Chicken Salad Heaven



•2 ( 12.5 oz) cans of chicken (or 3 cups diced cooked chicken)
•3/4 cup light mayonnaise
•1 cup red grapes, halved
•1 green onion, diced
...
•1 stalk celery, diced
•1/2 cup diced apple
•salt and pepper to taste
•pecans or cashews, optional
1.In a bowl, combine the chicken, mayo, grapes, green onion, celery, apple, salt, and pepper. Combine until well blended.
2.Serve on rolls, bread, or croissants sprinkle with some cashews or pecans. This can also be served on a lettuce leaf

1 can - Cherry pie filling, can of Sweetened Condensed Milk 14 oz, 1 8oz can of Crushed Pineapple 2/3 bag Mini Marshmallows, 16-24oz Cool Whip

Amy's Chocolate Gravy

CHOCOLATE GRAVY
1 c. sugar
2 tbsp. cocoa
2 tbsp. flour
2 c. milk

1 tsp. vanilla
1 tbsp. butter

Sift sugar, flour, and cocoa together in saucepan, add milk. On medium heat stir until gravy thickens to desired consistency. Remove from heat add butter and vanilla

Foil Baked Chicken Sandwich

Foil-Baked Chicken Parmesan Sandwiches

4 thin chicken breast cutlets
1 egg, beaten
1 cup Italian breadcrumbs
...
1/4 cup grated parmesan cheese
2 tablespoons butter
2 tablespoons olive oil
1 cup prepared marinara sauce, divided
1 cup shredded mozzarella cheese, divided
1 cup sliced pepperoni marinara cheese (or just pepperoni slices if you can't find the cheese)
8 basil leaves
4 hoagie rolls
4 sheets heavy-duty aluminum foil
Cooking spray

1. Season chicken cutlets with salt and pepper. Combine bread crumbs and parmesan cheese; dip cutlets in egg, then in bread crumb mixture. Melt the butter and olive oil in a large skillet. Working in batches, cook the chicken cutlets until browned and crispy.

2. Spray each sheet of aluminum foil lightly with cooking spray. Add the bottom of a roll to each sheet. Top each with 1/4 cup shredded mozzarella, a chicken cutlet, 1/4 cup of marinara, the pepperoni marinara cheese or pepperoni, and two basil leaves. Add the roll top. Wrap loosely, being sure all of the edges are sealed.

3. Cook sandwiches on a baking sheet in a 350-degree oven for 30 minutes. Let stand 5 minutes before unwrapping

Ranch/Bacon/Chicken Pasta

8 ounces penne pasta
 2 Tablespoons butter
1 1/2 Tbsp flour
2 Tbsp dry ranch dressing seasoning mix
2 cups milk
...
1 1/2 cup shredded cheddar cheese
1/3 cup cooked, chopped bacon
2 1/2 cups cooked chopped chicken

In a large pot, cook pasta according to package directions. Drain and set aside.

In same pot melt butter. Add flour and stir. Cook flour for 1 minute. Slowly whisk in milk. Continue cooking until sauce thickens. Stir in ranch dressing mix and cheese. Stir until cheese melts. Add chicken, bacon and pasta. Stir to coat

Boil the pasta in water
Cut up/ dice veggies
Mix together veggies & pasta
Add garlic salt, salt & pepper
Mix everything
Then final touch add the whole bottle of dressing
