Enchiladas

16 corn tortilla shells
1 1/2 lb ground beef (93/7)
Pack of enchilada seasoning
...
3 cans enchilada sauce
shredded cheese

Brown ground beef with seasoning pack added. Drain and set to side while heating tortilla shells over medium heat in skillet with small amount of oil (use tongs to flip, will need to add oil as you go). Fill shells with meat and roll up placing seam side down in 9 x 13 pan. Pour sauce over and place in preheated 350 degree oven for 15 minutes or until starts to bubble around the edges. Add cheese and continue heating until melted. Better if allowed to sit overnight in sauce and cooked the following day.
