Easy Reduced Sugar Carrot Cake with Sugar-Free Vanilla Cream cheese frosting (almost homemade!) using a Spice cake mix, add 1-1/2 to two cups grated carrots, 3/4 cup pecan pieces, four eggs, 1 cup milk, 1/3 cup oil, mix and bake as directed for two 8" layers. Cool.

plenda, add one box of Sugar Free/ Fat Free vanilla pudding mixed with 1-1/4 cup 2% milk, mix together, fold in 8oz carton of whipped topping, chill till thick. Fill the cake and frost the outsides. Sprinkle the inside layer and top of cake with about 1/2 cup pecan pieces if desired. Moist and delicious! This was my Step Moms birthday cake this year, she turned 80!
